Steps On How To Prepare Soya beans Powder
Ingredients
1/2 kg of Soya beans
2 litres water
Salt
Method
1. Roast dried Soya beans in a large frying pan by stirring the soya beans continuously in the hot pan until slightly brown.
2. Peel off the seed coats of the roasted soya beans with the aid of dried grinding stone or pestle and moral.
3. Mill the de-coated soya beans to flour form
Uses: used several ways in enriching foods eg.
1. For thickening vegetable soups
2. Added to cooked rice and eaten just like table Yeast
3. Added to ground beans used for akara and moi-moin
4. Added to baby's Custard or pap
5. Added To Family Soup.

Steps On How To Prepare Liquid Soya Milk
Ingredient
Soya beans as required.
Method
1. Boil Soya beans for 30 - 50 minutes.
2. Peel off the seed coats with grinding stone or pistol and mortal.
3. Remove seed coats with the aid of water thus
- top the beans with clean water, and
the seed coats will float on top of
the mixture,
- with the aid of a sieve pour off the
Top water which contain the seed
Coats, do this up to three or four
Times to completely get rid of the
Seed coats.
4. Blend the cleaned de-coated Soya Beans in a blender or with grinding stone.
5. Use a fine sieve ( akamu sieve) to strain the mixture. The filtrate is as white as liquid tinned with cow's milk.
6. Sweeten the filtrate or use unsweetened as liquid milk.
7. The shaft or top can be use as blended egusi (melon seeds) for thickening vegetable soups.

Ingredient
Soya beans as required
Method
1. Clean beans by removing stones and dirt.
2. Cook 1 cup of soya beans in 6 cups of boiling water for about 25 minutes, do not cover.
3. Drain.

Soya Beans Meat Balls
Ingredients
80g soya beans paste
150g plain wheat flour
200g minced meat
80g onion
1 egg
1 tablespoon curry powder
1 litre vegetable oil

Method
1. Mix the soya beans paste, minced meat, flour, curry powder and salt in a bowl.
2. Chop the onion into very tiny pieces and add to the mixture.
3. Whisk the egg and use to bind the mixture together.
4. Heat the oil, mould the mixture into small balls and fry until golden brown.
5. Drain And Serve
How To Prepare Soya-Ogi
Ingredient
Soya beans as required
Method
1. Soak maize for about 3days .
2. Wash and grind to a paste at the local mill or on a grinding stone.
3. Mix paste with water and sieve with a fine wire mesh.
4. Allow To settle for about 6 to 12 hours and remove excess water. What is left is the corn paste (ogi).
5. Mix three bowls of corn paste with one bowl of soya paste.
6. Prepare Soya-Ogi by taking the required quantity, mix with cold water and then thicken with boiling water.
7. Serve with akara, moin-moin or dodo according to taste.
Soya beans can be added to cow peas for akara and moin-moin

Steamed Beans Pudding (Moin-Moin Elemimeje) (4 portions)
Ingredients
300g cow peas
70g onions
30g red pepper
2 eggs
100g crayfish or prawns (picked)
100g fish (smoked or boiled)
100ml vegetable oil
100g corned beef. (Optional)
Salt To taste
Method
1. Soak the beans in water for about 30 minutes
2. Put de-hulled beans , onions and pepper in a blender , add water and blend until fine.
3. Add the vegetable oil, prawns , fish, corned beef and salt to taste.
4. Mix properly, and using a scoop, put mixture in leaves, or foil paper for wrapping, or in moin-moin cups.
5. Cut 1 egg into six places and put one portion in each wrap.
6. Place on a raised pot base and steam till firm (for about 40 minutes).
This can be served with akamu for breakfast, with jollof rice for parties at home, or alone as a snack.
How To prepare Akara (Fried Beans Pudding)
Ingredients
Cowpeas as required
Crayfish
Salt to taste
Method
1. Prepare as for moin-moin but reduce the amount of water added to de-hulled beans while grinding.
2. Beat the paste well with a wooden spoon until very light.
Add cleaned crayfish and salt.
3. Deep fry in hot vegetable oil.
4. Serve with akamu , garri, eko or eat as snack.

How To Prepare Beans Pottage
Ingredients
300g cowpeas
1 large onion
6 whole pepper (ground)
1 smoked fish
1 small piece akaun (potash)
1 level teaspoon curry or curry-leaves
250ml palm oil
Salt to taste
Method
1. Winnow the beans
2. Wag and put in a pot of boiling water in which the potash has been added.
3. Boil for 1 1/4 hours for the beans to be very soft.
4. Shred the onions into the beans , add the curry - leaves, salt and palm oil. Cover and cook for another 5 minutes.
5. Add pepper and cook for another 3 minutes.
6. Serve with akamu, garfi, agidi, dodo or as required.

Cook as for beans pottage, however, boil 120g of corn for about 30 minutes before the addition of beans.

Ingredients
200g peanuts
Salt to taste
Method
1. Shell the nuts before roasting.
2. Heat the iron or clay pot with sand or ash in it.
3. Put the nuts and toss about with a wooden spoon until golden brown
4. Pour sand and nuts into a sieve and sift.
5. Leave to cool and remove the skins
How To Prepare Groundnut Balls (Kuli-Kuli)
Ingredients
100g roasted shelled groundnuts
Warm water, salt to taste
1/2 teaspoon dried pepper
1 Onion
Method
1. Roast groundnut and skin.
2. Pound the groundnut with onion in a mortar with a pestle until smooth.
3. Knead and squeeze the ball adding a little hot water after each squeeze.
4. Repeat this process until nearly all the oil in the groundnut is extracted.
5. Shape the groundnut cake into even-sized balls, strips or rings ad desired.
6. Heat the oil extracted from the groundnut paste until a faint blue haze appears; then fry until golden brown.

3 litres water
Vegetables (carrot, onion)

Method
1. Soak in cold water overnight in a cool place
2. Change the water.
3. Cover with cold water, bring to boiling
4. Skim when necessary.
5. Add salt, 50g carrot, 50g onions,50 bacon trimmings and bouquet garni to every 1/2kg beans
6. Cook until tender.
How to prepare French Beans
Ingredients
1/3 kg French Beans (4 portions)
2 litres water
Salt.
Method
1. Top and tail beans.
2. Cut beans into strips.
3. Wash.
4. Cook in boiling salted water until tender.
5. Drain well and serve.
